Ingredients

  • 1 lb lean ground beef
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar & Monterey Jack blend)
  • ½ cup sour cream (or Greek yogurt)
  • ½ cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • salt & pepper to taste
  • Fresh cilantro (optional)
  • shredded lettuce (optional)
  • diced tomatoes (optional)

Instructions

  1. In a skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Stir in cumin, chili powder, salt, and pepper. Simmer for 2 minutes until fragrant.
  3. Heat tortillas in another pan or microwave until pliable.
  4. Place a tortilla on a plate, add seasoned beef and sprinkle with cheese.
  5. Top with sour cream, salsa, cilantro, lettuce, and tomatoes as desired.
  6. Fold in the sides of the tortilla and roll from bottom to top tightly.
