  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups low-sodium chicken broth
  • 2 cups frozen mixed vegetables
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with nonstick spray.
  2. Season the chicken breasts with salt and pepper, then place them in the bottom of the baking dish.
  3. In a bowl, mix rice, cream of chicken soup, chicken broth, frozen vegetables, onion powder, and garlic powder until well combined.
  4. Pour the mixture over the chicken evenly.
  5. Cover with aluminum foil and bake for 45 minutes.
  6. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 15 minutes until bubbly.
