Ingredients

Scale
  • 4 cups all-purpose flour
  • 1 cup unsalted butter (cold)
  • 2 tsp active dry yeast
  • 1/2 cup whole milk (warm)
  • 2 tbsp sugar
  • 1 tsp salt

Instructions

  1. Prepare the Dough: In a bowl, mix flour, sugar, salt, and yeast. Gradually add warm milk until a dough forms. Knead for 5-10 minutes, then let it rise in a warm place for about an hour.
  2. Roll Out the Butter: Place cold butter between parchment paper and pound into a rectangle (1/2 inch thick). Chill while the dough rises.
  3. Laminate the Dough: Roll out risen dough into a rectangle twice the size of the butter slab. Place chilled butter in the center and fold like an envelope. Roll out again to form a long rectangle.
  4. Fold and Chill: Fold dough into thirds, cover with plastic wrap, and refrigerate for at least one hour. Repeat rolling and folding two more times.
  5. Shape Croissants: Roll out dough again and cut triangles. Starting from the wide end, roll each triangle towards its point and place on lined baking sheets.
  6. Bake: Preheat oven to 400°F (200°C). Brush croissants with egg wash and bake for 15-20 minutes until golden brown.
