  • 1 lb Cajun sausage (smoked or spicy)
  • 1 cup heavy cream
  • 1 medium yellow onion, diced
  • 1 cup bell peppers (red, yellow, and green), diced
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Chop the onion, bell peppers, and garlic. Heat a large skillet over medium heat.
  2. Add sliced Cajun sausage to the skillet with onions and bell peppers. Sauté for 5-7 minutes until tender.
  3. Stir in minced garlic and Cajun seasoning; cook for 1 minute until fragrant.
  4. Cook the pasta according to package instructions until al dente, reserving some pasta water.
  5. Stir heavy cream into the sausage mixture; add reserved pasta water if needed for desired creaminess.
  6. Combine cooked pasta with the sauce in the skillet, mixing well. Garnish with Parmesan cheese before serving.
