  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 2 cups heavy whipping cream
  • ½ cup powdered sugar
  • Fresh strawberries and blueberries for decoration

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk eggs and granulated sugar until fluffy. Stir in vanilla extract.
  3. Gently fold in sifted flour and baking powder until just combined.
  4. Pour batter onto the prepared baking sheet, spreading evenly. Bake for 12-15 minutes until golden brown.
  5. Let cool for 5 minutes, then flip onto a powdered sugar-dusted towel and roll up gently while still warm.
  6. In a chilled bowl, whip heavy cream and powdered sugar until stiff peaks form. Unroll cooled cake and spread filling evenly on top.
  7. Roll the cake back up without the towel. Place seam-side down on a platter and decorate with fresh berries.
