- 2 cups shredded rotisserie chicken
- 8 oz fettuccine pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- 4 tbsp unsalted butter
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Instructions
- Cook the fettuccine in a large pot of salted boiling water according to package instructions until al dente. Drain and reserve ½ cup pasta water.
- In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Gradually stir in the heavy cream, letting it simmer for 2-3 minutes until slightly thickened.
- Whisk in the grated Parmesan cheese until melted. If the sauce is too thick, add reserved pasta water gradually to reach desired consistency.
- Stir in the shredded rotisserie chicken until coated in the sauce.
- Toss the cooked fettuccine with the creamy sauce until well combined. Serve immediately, garnished with additional Parmesan and fresh parsley if desired.
