  • 24 ladyfingers (about 7 oz)
  • 1 cup strong brewed espresso or coffee
  • 8 oz mascarpone cheese
  • 1/2 cup granulated sugar
  • 4 large egg yolks
  • 2 tbsp cocoa powder (for dusting)

Instructions

  1. Brew espresso or strong coffee and let it cool.
  2. In a bowl, whisk together egg yolks and sugar until pale and thick.
  3. Gently fold in mascarpone cheese until smooth.
  4. Quickly dip each ladyfinger into the cooled coffee and layer half at the bottom of a dish.
  5. Spread half of the mascarpone mixture over the ladyfingers, then repeat with remaining ingredients.
  6. Chill in the refrigerator for at least 4 hours or overnight before serving. Dust with cocoa powder before serving.
