  • 2 medium russet potatoes, diced
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika

Instructions

  4. Add beef broth and diced potatoes; bring to a boil then reduce heat to simmer for about 15 minutes or until potatoes are tender.
  5. Reduce heat further; mix in softened cream cheese until melted smooth. Gradually stir in cheddar cheese until fully incorporated.
