Instructions
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin with olive oil or cooking spray.
- In a mixing bowl, combine the cottage cheese, eggs, spinach, cheddar cheese, salt, and pepper. Stir until well blended.
- Pour the mixture evenly into each muffin cup until three-quarters full.
- Bake for 20-25 minutes until puffed and golden brown.
