- 8 oz rotini pasta
- 3 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 tsp dried thyme
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Set your Instant Pot to sauté mode and add olive oil. Brown the chicken breasts for about 5 minutes on each side. Remove and set aside.
- In the same pot, add minced garlic and frozen mixed vegetables; sauté for about 2 minutes until fragrant.
- Pour in chicken broth and add rotini pasta, ensuring it’s submerged.
- Secure the lid and pressure cook on high for 6 minutes. Allow a natural release for 5 minutes before quick-releasing any remaining pressure.
- Shred the cooked chicken in the pot, then stir in heavy cream and dried thyme. Season with salt and pepper.
