  • 1 cup fresh shiitake or cremini mushrooms, sliced
  • 1 cup pearl barley
  • 1 medium sweet yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup diced carrots
  • 1 cup chopped celery
  • 2 tsp fresh thyme leaves
  • 1 bay leaf
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping onions, celery, carrots, and mincing garlic. Rinse mushrooms and slice thinly.
  2. In a large pot over medium heat, warm olive oil. Add onions and sauté until translucent (about 5 minutes). Mix in garlic until fragrant.
  3. Stir in diced carrots, celery, and mushrooms. Sauté until mushrooms soften (around 8 minutes).
  4. Add pearl barley and vegetable broth; season with salt and pepper. Bring to a gentle boil then reduce heat to simmer.
  5. Cook for 30-40 minutes or until barley is tender yet chewy, stirring occasionally.
  6. In the last few minutes of cooking, add thyme leaves and bay leaf. Adjust seasoning before serving.
