Ingredients

  • 1 can (15 oz) white beans (cannellini or great northern), drained and rinsed
  • 1 head of garlic
  • 2 tbsp olive oil, plus more for drizzling
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp fresh rosemary, chopped (or thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. In a mixing bowl, squeeze out the roasted garlic cloves. Add white beans, olive oil, lemon juice, rosemary, salt, and pepper.
  3. Blend until smooth or slightly chunky based on preference. Adjust seasoning if necessary.
  4. Transfer to a serving bowl, drizzle with more olive oil, garnish with herbs, and serve with bread or veggies.
