- 1 can (15 oz) white beans (cannellini or great northern), drained and rinsed
- 1 head of garlic
- 2 tbsp olive oil, plus more for drizzling
- 2 tbsp freshly squeezed lemon juice

- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
- In a mixing bowl, squeeze out the roasted garlic cloves. Add white beans, olive oil, lemon juice, rosemary, salt, and pepper.
- Blend until smooth or slightly chunky based on preference. Adjust seasoning if necessary.
