  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces cremini mushrooms, sliced
  • 8 ounces shiitake mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup vegetable broth
  • 18 ounces fresh or frozen ravioli
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 2 tablespoons fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, heat olive oil. Sauté onions and garlic until translucent.
  3. Add mushrooms, season with salt and pepper; cook until tender (5-7 minutes).
  4. Stir in heavy cream and vegetable broth; simmer until slightly thickened (3-4 minutes).
  5. Layer half of the ravioli in the baking dish, pour half of the mushroom sauce over it, sprinkle with mozzarella. Repeat layers.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until cheese is golden.
