- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 8 ounces cremini mushrooms, sliced
- 8 ounces shiitake mushrooms, sliced
- 1 cup heavy cream
- 1 cup vegetable broth
- 18 ounces fresh or frozen ravioli
- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- 2 tablespoons fresh rosemary, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large skillet over medium heat, heat olive oil. Sauté onions and garlic until translucent.
- Add mushrooms, season with salt and pepper; cook until tender (5-7 minutes).
- Stir in heavy cream and vegetable broth; simmer until slightly thickened (3-4 minutes).
- Layer half of the ravioli in the baking dish, pour half of the mushroom sauce over it, sprinkle with mozzarella. Repeat layers.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until cheese is golden.
