  • 1 cup dry green or brown lentils
  • 2 medium carrots, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 cups fresh spinach (Optional)

Instructions

  1. In a large pot over medium heat, drizzle olive oil and add chopped onions. Sauté until translucent (about 5 minutes).
  2. Add ground turkey and minced garlic; cook until the turkey is browned.
  3. Stir in diced carrots, chopped celery, and spices; mix well.
  4. Pour in vegetable broth and diced tomatoes along with lentils. Stir to combine.
  5. Bring to a gentle boil; reduce heat to low and simmer for about 30-35 minutes until lentils are tender.
  6. If using spinach, stir it in during the last 5 minutes of cooking.
