  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 ripe yet firm fresh pears, thinly sliced
  • 1 cup walnuts, roughly chopped and toasted
  • 4 cups mixed greens (arugula, spinach, romaine)
  • 3 tablespoons Dijon mustard
  • 1/3 cup high-quality extra virgin olive oil
  • 2 tablespoons honey
  • 2 tablespoons freshly squeezed lemon juice

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat.
  2. Sear chicken for 6-7 minutes on each side until golden brown. Remove from skillet and rest for 5 minutes before slicing.
