- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach
- 1 cup dried cranberries
- 8 oz cream cheese (softened)
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1/2 cup panko bread crumbs
Instructions
- Preheat your oven to 375°F (190°C). Place chicken breasts between plastic wrap and gently pound until about 1/2 inch thick.
- In a skillet over medium heat, heat olive oil and sauté spinach for about 2 minutes until wilted. Stir in cranberries and garlic powder.
- In a bowl, combine the sautéed spinach mixture with cream cheese and Italian seasoning until creamy.
- Lay out the chicken breasts, spoon filling onto each, and fold them like envelopes. Secure with toothpicks or twine.
- Place stuffed chicken in a greased baking dish, sprinkle panko on top, and bake for 25-30 minutes until golden brown and cooked through (internal temp should reach 165°F).
