  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup dried cranberries
  • 8 oz cream cheese (softened)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1/2 cup panko bread crumbs

Instructions

  1. Preheat your oven to 375°F (190°C). Place chicken breasts between plastic wrap and gently pound until about 1/2 inch thick.
  2. In a skillet over medium heat, heat olive oil and sauté spinach for about 2 minutes until wilted. Stir in cranberries and garlic powder.
  3. In a bowl, combine the sautéed spinach mixture with cream cheese and Italian seasoning until creamy.
  4. Lay out the chicken breasts, spoon filling onto each, and fold them like envelopes. Secure with toothpicks or twine.
  5. Place stuffed chicken in a greased baking dish, sprinkle panko on top, and bake for 25-30 minutes until golden brown and cooked through (internal temp should reach 165°F).
