  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 package (16 oz) potato gnocchi
  • 1 cup heavy cream
  • 1 cup grated Asiago cheese
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth

Instructions

  1. Gather all ingredients and chop the garlic. Preheat a skillet over medium heat, seasoning the chicken breasts with salt and pepper.
  2. Add olive oil to the skillet and cook the chicken for about 6 minutes on each side until golden brown and cooked through (165°F). Remove from pan and let rest.
  3. In a separate pot, boil water and cook gnocchi according to package instructions until they float (about 2 minutes). Drain.
  4. In the same skillet, add more olive oil if needed; sauté garlic until fragrant. Pour in heavy cream and chicken broth, then mix in grated Asiago cheese until creamy.
  5. Chop the rested chicken into bite-sized pieces; return to skillet along with cooked gnocchi and spinach. Stir gently to coat everything in the sauce.
  6. Serve warm, optionally drizzling extra cheese on top.
