  • 2 cups Yukon Gold potatoes, diced (about 2 medium)
  • 1 cup sharp cheddar cheese, shredded
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Wash broccoli and chop into small florets; set aside.
  2. Peel and dice potatoes into 1-inch cubes. In a large pot, combine potatoes and vegetable broth; bring to a gentle boil and cook for 15-20 minutes until fork-tender.
  3. Meanwhile, in a separate pan, melt butter over medium heat. Sauté diced onion and minced garlic until onions are translucent (about 5 minutes).
  4. Add broccoli to the pot with potatoes; simmer for another 5 minutes until tender but bright green. Puree the mixture using an immersion blender or regular blender until smooth.
  5. Return blended soup to low heat; gradually stir in shredded cheddar cheese until melted. Add heavy cream and season with salt and pepper to taste.
  6. Simmer on low for an additional 5 minutes before serving.
