- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cups fresh broccoli florets
- 8 oz fusilli or penne pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 tbsp extra virgin olive oil
- ½ cup breadcrumbs
Instructions
- Preheat oven to 350°F (175°C). Cook pasta in salted water until al dente; drain.
- In a skillet, heat olive oil over medium heat. Sauté seasoned chicken until golden brown (5-7 minutes).
- Add broccoli florets during the last 2 minutes of cooking. In a bowl, combine cooked pasta with chicken and broccoli.
- Prepare the Alfredo sauce by mixing heavy cream, garlic powder, and half of the Parmesan in a saucepan over medium heat until smooth. Season with salt and pepper.
- Pour sauce over the pasta mixture, stir to coat evenly, then transfer to a greased baking dish. Top with remaining Parmesan and breadcrumbs.
- Bake for 25-30 minutes or until golden brown on top.
