  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 12 oz penne pasta
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic (minced)
  • 1 cup low-sodium chicken broth
  • 2 tsp dried Italian herbs (basil, oregano, thyme)
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Cook the penne pasta in salted boiling water according to package instructions until al dente (about 10-12 minutes). Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Season chicken with salt and pepper; sauté for about 6-7 minutes on each side until golden brown and cooked through. Remove chicken from skillet and let it rest.
  3. In the same skillet, add minced garlic; sauté for one minute until fragrant. Add spinach and stir until wilted (about two minutes).
  4. Pour in heavy cream and chicken broth while stirring. Add dried Italian herbs; simmer for three minutes.
  5. Chop the rested chicken into bite-sized pieces and return it to the skillet along with the cooked penne. Gently mix until everything is well combined.
  6. Serve immediately, topped with extra Parmesan if desired.
