  • 8 oz fettuccine or spaghetti
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, ricotta cheese, garlic, spinach, Parmesan cheese, salt, and pepper. Mix gently until just combined; form into golf ball-sized meatballs and place on the prepared baking sheet.
  3. Bake meatballs for about 20 minutes or until golden brown and cooked through (internal temperature of 165°F).
  4. In a medium saucepan over medium heat, melt butter. Add heavy cream and bring to a simmer. Stir in Parmesan until melted; season with salt and pepper.
  5. Cook pasta according to package instructions until al dente; drain while reserving some pasta water.
  6. Combine cooked pasta with Alfredo sauce; top with baked meatballs. Garnish with extra spinach or Parmesan if desired.
