  • 34 boneless chicken breasts (1.5 lbs), diced
  • 8 oz penne pasta
  • 1 cup fresh asparagus, chopped
  • 8 oz button or cremini mushrooms, sliced
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook penne pasta in salted boiling water until al dente (about 10 minutes). Drain and set aside.
  2. In a large skillet over medium heat, heat olive oil. Add diced chicken seasoned with salt and pepper; cook until golden brown (5-7 minutes).
  3. Add minced garlic, mushrooms, and asparagus to the skillet; sauté until mushrooms soften (4-5 minutes).
  4. Pour in heavy cream and stir in Parmesan cheese until melted and smooth.
  5. Combine the cooked penne with the sauce in the skillet; mix well to coat evenly (1-2 minutes).
