- 8 oz penne pasta
- 1 cup fresh asparagus, chopped
- 8 oz button or cremini mushrooms, sliced
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook penne pasta in salted boiling water until al dente (about 10 minutes). Drain and set aside.
- In a large skillet over medium heat, heat olive oil. Add diced chicken seasoned with salt and pepper; cook until golden brown (5-7 minutes).
- Add minced garlic, mushrooms, and asparagus to the skillet; sauté until mushrooms soften (4-5 minutes).
- Pour in heavy cream and stir in Parmesan cheese until melted and smooth.
- Combine the cooked penne with the sauce in the skillet; mix well to coat evenly (1-2 minutes).
- Serve immediately with extra Parmesan sprinkled on top.
