Instructions
- Rinse the pearl barley under cold water until clear and set aside.
- In a large pot over medium heat, add olive oil. Sauté the diced onion and minced garlic for about 5 minutes until translucent.
- Add sliced mushrooms to the pot and cook for another 7-10 minutes until caramelized.
- Stir in the rinsed barley and pour in the vegetable broth. Bring to a gentle simmer, then reduce heat and cover. Cook for approximately 30 minutes until barley is tender.
- Stir in heavy cream, thyme, salt, and pepper. Simmer for an additional 5 minutes.
