  • 1 cup canned pumpkin puree
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese (plus extra for garnish)
  • 3 cloves garlic, minced
  • ¼ tsp ground nutmeg
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
  2. In a skillet over medium heat, melt 2 tbsp butter or olive oil. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in pumpkin puree and heavy cream; simmer for 5 minutes. Season with salt, pepper, and nutmeg.
  4. Add Parmesan cheese until melted. If the sauce is too thick, adjust with reserved pasta water.
  5. Toss cooked pasta into the sauce and heat for an additional 2 minutes to combine flavors.
