  • 12 oz rigatoni pasta
  • 8 oz Boursin cheese
  • 3 cloves fresh garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the rigatoni in salted boiling water until al dente, about 10-12 minutes. Reserve ½ cup of pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 1 minute.
  3. Lower the heat and stir in heavy cream and Boursin cheese until melted and creamy.
  4. Add the cooked rigatoni to the skillet, mixing well to coat with sauce. If too thick, add reserved pasta water gradually.
  5. Stir in grated Parmesan and season with salt and pepper to taste.
  6. Serve immediately, garnished with extra Parmesan or herbs if desired.
