  • 1 lb large shrimp, deveined
  • 4 cups low-sodium chicken or vegetable broth

  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley or basil, chopped

Instructions

  1. In a large skillet, heat olive oil and butter over medium heat until melted. Add onion and garlic; sauté until translucent.
  2. Stir in Arborio rice and toast for about 2-3 minutes.
  3. Add dry white wine; stir until absorbed. Gradually add warm broth one ladle at a time, stirring frequently until each addition is absorbed.
  4. When the rice is creamy yet al dente (about 15-20 minutes), fold in shrimp and cook until pink and opaque (3-5 minutes).
  5. Stir in Parmesan cheese and chopped herbs just before serving. Plate immediately and garnish with extra herbs or cheese.
