  • 1 lb large shrimp, deveined
  • 1 cup green peas (fresh or frozen)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • ½ cup dry white wine
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. In a large pan over medium heat, combine olive oil and butter until melted. Sauté onions and garlic until fragrant.
  2. Stir in Arborio rice, toasting lightly for 1-2 minutes.
  3. Deglaze the pan by adding white wine; cook until evaporated.
  4. Gradually add warm chicken broth one ladle at a time, stirring continuously until absorbed, about 18-20 minutes.
  5. Fold in shrimp and peas; cook until shrimp is pink and opaque.
  6. Remove from heat and stir in Parmesan cheese along with salt and pepper.
