Description

  • 8 oz elbow macaroni
  • 1 medium head of cauliflower, cut into florets
  • 2 cups shredded aged white cheddar cheese
  • 2 tbsp unsalted butter
  • 2 cups whole milk
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot and cook the macaroni until al dente. Drain and set aside.
  2. Preheat oven to 425°F (220°C). Toss cauliflower with olive oil, salt, and pepper on a baking sheet. Roast for about 20 minutes until golden brown.
  3. In a saucepan, melt butter over medium heat. Stir in flour, cooking for 1-2 minutes. Gradually whisk in milk until smooth, then add shredded cheddar cheese and stir until melted.
  4. In a large bowl, mix cooked pasta with roasted cauliflower and cheese sauce until fully coated.
  5. Transfer to a greased baking dish and sprinkle with panko breadcrumbs mixed with melted butter.
  6. Cook at 350°F (175°C) for 25-30 minutes until bubbling and golden brown.
