  • 8 oz spaghetti or fettuccine
  • 2 medium zucchinis, sliced into ribbons
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente, reserving ½ cup of the pasta water before draining.
  2. While the pasta cooks, slice the zucchinis into thin ribbons using a vegetable peeler.
  3. In a large skillet over medium heat, melt 2 tablespoons of butter. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Add zucchini ribbons to the skillet and sauté for about 3 minutes until tender but still crisp.
  5. Combine the drained pasta with zucchini and garlic in the skillet, tossing with reserved pasta water to achieve a creamy sauce.
  6. Stir in remaining butter, Parmesan cheese, salt, and pepper. Serve immediately.
