  • 4 boneless, skinless chicken breasts
  • 1 cup flour
  • 2 large eggs
  • 1 ½ cups panko bread crumbs
  • 1 tsp Italian seasoning
  • 2 cups fresh mozzarella cheese, shredded
  • 2 cups marinara sauce (store-bought or homemade)
  • ½ cup freshly grated Parmesan cheese
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Flatten chicken breasts to about half an inch thick using plastic wrap.
  2. Season both sides of each chicken breast with salt and pepper. Dredge in flour, shaking off excess.
  3. Whisk eggs in a bowl. Dip floured chicken into the egg mixture, then coat with panko mixed with Italian seasoning.
  4. Heat olive oil in a skillet over medium heat. Sear chicken until golden brown on both sides (about 3-4 minutes per side), then transfer to a baking dish.
  5. Top each piece with marinara sauce and sprinkle mozzarella and Parmesan cheese on top.
  6. Bake for 15-20 minutes until cheese is bubbly and golden.
