  • 4 medium starchy potatoes (about 1.5 lbs)
  • 1 medium onion
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Peel and grate the potatoes and onion. Soak grated potatoes in cold water to prevent browning.
  2. Drain the grated mixture thoroughly, squeezing out excess moisture.
  3. In a bowl, combine drained potatoes, onion, eggs, flour, salt, and pepper. Mix until just combined.
  4. Heat oil in a skillet over medium heat until shimmering.
  5. Drop spoonfuls of the batter into the skillet and flatten slightly. Fry for about 4 minutes on each side until golden brown.
