  • 1 cup sushi rice
  • 1 cup water
  • 2 tbsp rice vinegar
  • 1 fresh salmon fillet (approx. 6 oz)
  • 1 ripe avocado, sliced
  • 2 green onions, thinly sliced
  • 3 tbsp vegetable oil
  • 1 tbsp sesame oil
  • Sea salt to taste
  • 1 small cucumber, thinly sliced
  • ½ cup panko bread crumbs
  • Sriracha sauce for drizzling

Instructions

  1. Rinse sushi rice under cold water until clear; combine with water in a pot and bring to boil. Reduce heat, cover, and simmer for about 15 minutes.
  2. Transfer cooked rice to a bowl, drizzle in rice vinegar, and fold gently. Let cool slightly.
  3. Shape the cooled rice into rectangular pieces using wet hands.
  4. Heat vegetable oil in a skillet over medium-high heat; fry rice rectangles until golden brown (about 3-4 minutes per side).
  5. While the rice crisps, season salmon with sea salt and sear skin-side down in sesame oil for around 4-5 minutes, then flip and cook until opaque.
  6. Assemble by placing crispy rice on plates; top with salmon slices, avocado, and cucumber. Drizzle with Sriracha before serving.
