Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cans (4 oz each) diced green chiles
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • Juice of 2 limes
  • ½ cup fresh cilantro, chopped
  • Tortilla chips or toppings (avocado slices, radishes)

Instructions

  1. Chop the onion and mince the garlic.
  2. Sear the chicken in a skillet over medium heat until golden brown (about 3-4 minutes per side).
  3. Transfer the seared chicken to the crockpot; add onions, garlic, green chiles, spices, and broth.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred the chicken with two forks when done; return to pot with lime juice and cilantro.
