  • 1/2 cup buttermilk (room temperature)
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 4 cups powdered sugar (sifted)
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 15×10 inch jelly roll pans.
  2. In a mixing bowl, whisk together flour, cocoa powder, baking powder, and salt. Make a well in the center and add sugar, eggs, buttermilk, oil, vanilla extract, and red food coloring; mix until smooth.
  3. Divide the batter evenly between pans and bake for 12-15 minutes until a toothpick comes out clean.
  4. Cool cakes for about 5 minutes before transferring to kitchen towels dusted with powdered sugar.
  5. For the frosting, beat softened cream cheese and butter until creamy; gradually add powdered sugar and lemon juice until smooth.
  6. Once cakes are completely cool, spread frosting on one layer, roll tightly from one end, and frost the outside.
