  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 4 cloves fresh garlic, minced
  • 1-inch piece ginger, minced
  • 2 tablespoons vegetable oil
  • 1 cup jasmine rice
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli)
  • ¼ cup low-sodium soy sauce
  • 2 teaspoons sesame oil
  • 1 tablespoon honey or sugar
  • 1 tablespoon rice vinegar

Instructions

  1. Prepare all ingredients by chopping vegetables into bite-sized pieces.
  2. Marinate chicken in a bowl with soy sauce, garlic, ginger, and honey for at least 30 minutes.
  3. Rinse jasmine rice under cold water until clear and cook according to package instructions.
  4. Heat vegetable oil in a skillet over medium-high heat. Sauté marinated chicken until golden brown and fully cooked (about 6-8 minutes). Remove from skillet.
  5. In the same skillet, add mixed vegetables and sauté for about 3-4 minutes until vibrant yet crisp.
  6. Stir in soy sauce, sesame oil, honey or sugar, and rice vinegar; mix until heated through.
  7. Serve in bowls with rice topped with chicken and sautéed veggies.
