- 1 red bell pepper, diced

- 3 tbsp low-sodium soy sauce
- 2 tbsp sesame oil
- 2 tbsp rice vinegar (unseasoned)
- 1 tbsp honey or maple syrup
- 1 tsp freshly grated ginger
Instructions
- Cook soba noodles according to package instructions until al dente; drain and rinse under cold water.
- While noodles cool, chop cucumber, red bell pepper, carrots, and green onions into uniform sizes.
- In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey or maple syrup, and grated ginger.
- In a large bowl, combine cooled noodles and chopped vegetables. Pour the dressing over everything and toss gently until well coated.
