  • 1 bunch fresh asparagus (approximately 8 oz)
  • 5 oz baby spinach
  • 2 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • ¼ cup pine nuts, lightly toasted
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Preheat a grill pan over medium-high heat. Season chicken breasts with salt and pepper. Grill for 6-7 minutes per side until fully cooked (internal temperature of 165°F). Let rest before slicing.
  2. In a skillet over medium heat, add olive oil and sauté trimmed asparagus for 5-7 minutes until tender-crisp.
  3. Whisk together olive oil, lemon juice, minced garlic, salt, and pepper in a small bowl.
  4. In a large bowl, toss together sautéed asparagus, baby spinach, sliced chicken, toasted pine nuts, and Parmesan cheese. Drizzle with dressing and mix gently.
