  • 3 boneless, skinless chicken breasts (about 1.5 lbs), cooked and diced
  • 6 slices bacon, crispy and crumbled
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup mayonnaise
  • 1 tbsp Dijon mustard

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken with salt and pepper; bake for 25-30 minutes until cooked through. Allow to cool before dicing.
  2. Cook bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble.
  3. In a large bowl, combine diced chicken, crumbled bacon, chopped romaine, and halved cherry tomatoes.
  4. In a separate bowl, whisk together mayonnaise and Dijon mustard; pour over the salad mixture and toss gently.
