A quick and nutritious delight featuring tender grilled chicken, creamy avocado, and fresh veggies, perfect for a satisfying meal any time.


Ingredients

  • 2 boneless skinless chicken breasts
  • 2 ripe avocados
  • 4 tortillas (flour or whole wheat)
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach or lettuce
  • ½ cup Greek yogurt or hummus
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Grill over medium heat for 6-8 minutes on each side until fully cooked.
  2. In a bowl, mash ripe avocados and mix in lemon juice, salt, and pepper.
  3. Dice cherry tomatoes and wash spinach or lettuce.
  4. Spread mashed avocado onto each tortilla. Layer sliced chicken, tomatoes, and greens.
  5. Fold in the sides of the tortilla and roll tightly. Secure with toothpicks if needed.
  6. Serve immediately or refrigerate for later enjoyment.
