  • 1 lb ground beef (or turkey)
  • 1 can (15 oz) chili beans
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 4 cups beef or vegetable broth

Instructions

  1. In a skillet over medium heat, brown the ground beef until cooked through. Drain excess fat and set aside.
  2. Sauté the chopped onion and minced garlic in the same skillet until soft (about 3 minutes).
  3. In the crock pot, combine the browned meat, sautéed onion and garlic, elbow macaroni, chili beans, diced tomatoes (with juices), and spices.
  4. Pour in enough broth to cover the mixture by about an inch.
  5. Cover and cook on low for 4 hours or high for 2 hours.
  6. About 10 minutes before serving, stir in shredded cheddar cheese until melted.
