Description

Enchilada Cups are a fun and flavorful twist on traditional enchiladas, perfect for gatherings or a cozy night in. These crispy corn tortilla cups are generously filled with seasoned ground meat, savory enchilada sauce, and melted cheese, then baked to perfection.   • 10 corn tortillas
  • 1 lb ground beef or turkey
  • 1 cup enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 can (15 oz) black beans (optional)
  • ½ cup sour cream (for topping)
  • ¼ cup chopped cilantro (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a muffin tin with nonstick cooking spray.
  2. Cut each corn tortilla into rounds and press them into the muffin cups to form little bowls.
  3. In a skillet over medium heat, cook the ground meat until browned. Drain excess fat and stir in the enchilada sauce.
