  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 large sweet potatoes (about 1.5 lbs), peeled and cubed
  • 2 tbsp extra virgin olive oil
  • 3 tbsp Dijon mustard
  • 1/4 cup pure maple syrup
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and coat a baking dish with nonstick spray.
  2. Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread on the baking dish and roast for about 25 minutes until tender.
  3. While the potatoes roast, whisk together Dijon mustard, maple syrup, garlic powder, salt, and pepper in a small bowl.
  4. Season chicken breasts with salt and pepper. After the sweet potatoes have roasted for 10 minutes, place seasoned chicken in another baking dish and brush generously with the maple-Dijon sauce.
  5. Bake both dishes for an additional 20-25 minutes or until chicken reaches an internal temperature of at least 165°F (74°C). Serve warm.
