Description

Protein Blueberry Muffins are a deliciously healthy snack, packed with protein and bursting with fresh blueberries. Enjoy these fluffy muffins for breakfast or as an on-the-go treat.


Ingredients

  • 1 cup rolled oats
  • 1 cup plain Greek yogurt
  • 2 large eggs
  • 1 cup fresh blueberries
  • 2 tsp baking powder
  • 3 tbsp honey (or maple syrup)
  • 1 tsp ground cinnamon
  • 1 scoop vanilla protein powder

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together rolled oats, protein powder, baking powder, and cinnamon.
  3. In another bowl, mix Greek yogurt, honey (or maple syrup), and eggs until smooth.
  4. Gently fold in the blueberries into the wet mixture.
  5. Combine the wet and dry mixtures without overmixing.
  6. Spoon the batter into the muffin tin and bake for 18-20 minutes until golden brown and a toothpick comes out clean.
