  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups fresh romaine lettuce, chopped
  • ½ cup Caesar dressing
  • 4 large flour tortillas
  • ½ cup freshly grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • Freshly cracked black pepper to taste

Instructions

  1. Preheat grill or skillet over medium heat. Season chicken breasts with salt and pepper. Cook for 6-7 minutes on each side until golden brown and cooked through.
  2. While the chicken cooks, mix Caesar dressing in a bowl; optionally add lemon juice or Worcestershire sauce for extra flavor.
  3. After resting the cooked chicken, chop it into bite-sized pieces. Prepare romaine and cherry tomatoes by chopping and halving them respectively.
