  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 medium shallots, finely chopped
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 tsp dried Italian herbs (oregano and basil)
  • ½ cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then cook until golden brown on both sides (about 7-8 minutes per side). Remove from the skillet and let rest.
  2. In the same skillet, add chopped shallots and minced garlic; sauté until fragrant (about 1-2 minutes).
  3. Pour in heavy cream and dried herbs while scraping the bottom of the pan. Let simmer until thickened.
  4. Stir in fresh spinach until wilted, then mix in grated Parmesan until melted.
  5. Return chicken to the skillet, spooning sauce over each piece. Cook together for another couple of minutes before serving.
