  • 2 store-bought flatbreads
  • 1 cup crumbled feta cheese
  • 2 cups baby spinach, chopped
  • 1 cup cherry tomatoes, halved
  • ½ medium red onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh basil, chopped
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine feta cheese, spinach, cherry tomatoes, red onion, olive oil, herbs, and lemon juice.
  3. Evenly spread the mixture over each flatbread.
  4. Bake for 12-15 minutes until golden brown and crispy around the edges.
  5. Allow to cool slightly before slicing into wedges and serving warm.
