Description

Jack-O-Lantern Stuffed Peppers are a festive and delicious way to celebrate Halloween. These cheerful orange bell peppers are hollowed out and filled with a hearty mixture of rice, black beans, and spices, topped with melted cheese. Perfect as a show-stopping dish for gatherings or a cozy family dinner, these stuffed peppers provide a fun, nutritious meal that can be easily customized to suit everyone’s tastes.


Ingredients

  • 4 medium orange bell peppers
  • 1 cup cooked rice (white or brown)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 small onion, finely chopped
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or Monterey Jack)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice off the tops of the bell peppers and scoop out the seeds.
  3. In a skillet over medium heat, heat olive oil and sauté onions until soft (about 5 minutes).
  4. In a large bowl, mix cooked rice, black beans, sautéed onions, cumin, chili powder, salt, and pepper.
  5. Stuff each pepper generously with the mixture.
  6. Place stuffed peppers upright in a baking dish with half an inch of water. Cover loosely with foil and bake for 30 minutes.
  7. Remove foil, sprinkle cheese on top of each pepper, and bake for an additional 10 minutes until bubbly.
