- 4 medium orange bell peppers
- 1 cup cooked rice (white or brown)
- 1 can (15 oz) black beans, drained and rinsed
- 1 small onion, finely chopped
- 2 tsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or Monterey Jack)
Instructions
- Preheat the oven to 375°F (190°C).
- Slice off the tops of the bell peppers and scoop out the seeds.
- In a skillet over medium heat, heat olive oil and sauté onions until soft (about 5 minutes).
- In a large bowl, mix cooked rice, black beans, sautéed onions, cumin, chili powder, salt, and pepper.
- Stuff each pepper generously with the mixture.
- Place stuffed peppers upright in a baking dish with half an inch of water. Cover loosely with foil and bake for 30 minutes.
- Remove foil, sprinkle cheese on top of each pepper, and bake for an additional 10 minutes until bubbly.
