Instructions
- Wash and zest two lemons; juice all three lemons to yield about 1/2 cup of juice.
- In a medium saucepan, combine 1 cup sugar and 1/2 cup water over medium heat until dissolved.
- Stir in lemon juice and zest, then cook until the mixture reaches 250°F (121°C) on a candy thermometer.
- Pour the hot mixture into silicone molds or onto a parchment-lined baking sheet.
- Allow to cool completely for about one hour, then cut into pieces if necessary.
- Dust with powdered sugar before serving.
