  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 4 cloves fresh garlic, minced
  • 12 oz spaghetti
  • 1/2 cup freshly squeezed lemon juice (about 2 lemons)
  • 3 tbsp extra virgin olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients, chopping garlic and parsley and slicing chicken breasts into bite-sized pieces.
  2. Cook spaghetti in salted boiling water until al dente; reserve some pasta water before draining.
  3. In a large skillet over medium heat, add olive oil and sauté chicken until golden brown for about 6-7 minutes, seasoning with salt and pepper.
  4. Add minced garlic to the skillet and sauté for another 1-2 minutes until aromatic.
  5. Stir in lemon juice and reserved pasta water to create the sauce.
  6. Toss drained spaghetti into the skillet with the chicken and sauce; mix well and top with grated Parmesan.
