- 1 cup fresh peas (about 150g)
- 4 cups mixed greens (spinach, arugula, kale)
- 1/2 cup grated Cacio de Roma cheese (or Pecorino Romano)
- 1 tsp freshly cracked black pepper
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
Instructions
- Rinse the mixed greens under cold water and snap off tough stems.
- In boiling salted water, cook the fresh peas for 2-3 minutes until tender. Drain and cool in ice water.
- In a large skillet over medium heat, sauté mixed greens in olive oil until slightly wilted.
- In a bowl, whisk together Cacio de Roma cheese, pepper, lemon juice, and olive oil until smooth.
- Add cooked peas to the skillet with greens and gently fold in the dressing. Warm through for another minute.
- Serve in a bowl or plate, garnished with extra cheese and pepper if desired.
