Description

Peas and Greens with Cacio e Pepe Dressing is a vibrant, flavorful dish that effortlessly combines fresh peas and mixed greens with a creamy, tangy dressing.


Ingredients

  • 1 cup fresh peas (about 150g)
  • 4 cups mixed greens (spinach, arugula, kale)
  • 1/2 cup grated Cacio de Roma cheese (or Pecorino Romano)
  • 1 tsp freshly cracked black pepper
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice

Instructions

  1. Rinse the mixed greens under cold water and snap off tough stems.
  2. In boiling salted water, cook the fresh peas for 2-3 minutes until tender. Drain and cool in ice water.
  3. In a large skillet over medium heat, sauté mixed greens in olive oil until slightly wilted.
  4. In a bowl, whisk together Cacio de Roma cheese, pepper, lemon juice, and olive oil until smooth.
  5. Add cooked peas to the skillet with greens and gently fold in the dressing. Warm through for another minute.
  6. Serve in a bowl or plate, garnished with extra cheese and pepper if desired.
